Vegetable Vegan Cabbage Soup
This Cabbage Soup Recipe is simply awesome! The recipe is vegan, meaning no animal products are used. It is very healthy and great as a low calorie meal.
Vegan Cabbage Soup Ingredients:
- 1/2 head of cabbage shredded
- 1 yellow onion chopped
- 3 stalks celery chopped
- 3 carrots chopped
- 2 cloves garlic minced
- 2 Tbs tomato paste
- 8 cups of vegetable broth
- 15 ounce can diced tomatoes
- 1 cup fresh green beans chopped
- 1 tsp parsley
- 1 Tbs safflower oil
- 2 zucchini chopped
- Salt and pepper to taste
Vegan Cabbage Soup Instructions:
Heat the oil in a large pot and add the onion. Cook over medium heat until tender, then add the celery and carrots and cook about 5 minutes.
Next add minced garlic and tomato paste into the pot. Stir everything together well and let cook for another few minutes.
Add 8 cups of vegetable broth. Add diced tomatoes, green beans, cabbage and all the spices. Stir well and bring to a boil and cover the pot and cook on low for about 30 minutes.
Add zucchini and cook uncovered for another 10 minutes.
Add salt and pepper to taste if needed.
Serve hot and enjoy. This Cabbage Soup recipe is especially good a day or two later since the flavors will blend nicely over time.
